Description:I'm not very keen on beef so I searched and searched for an alternative and finally stumbled on a recipe for Chicken Stroganoff. I've modified it a bit (to taste), though. Hope you enjoy it, too.
Ingredients:- 1/2 kg. chicken breast cut into finger-size slices
- 200 gms. (cooked) pasta noodles
- 1 pc. white onion, sliced
- 1 c. (200 gms) sliced button mushrooms
- 2/3 c. flour
- 2 tsp. salt
- 1 tsp. pepper
- 4 oz. low fat butter
- 3 tbsp. dijon mustard
- 3 tbsp. paprika
- Chicken broth - 1/2 cup
- 125 g. sour cream
- 125 g. plain yoghurt
Directions:
- Mix flour, salt, and pepper, and coat the chicken.
- Melt the butter in a frying pan. Then add in the chicken and cook until light golden. Mix in the mushrooms, onions, and cook for 3 to 5 minutes.
- Mix in mustard, paprika, and chicken broth. Cover and simmer for 3 to 5 minutes.
- Add in the sour cream and yogurt. Cook for another 2 minutes.
- In case you want more sauce just add water as needed. Allow to simmer
- Serve over the hot cooked pasta noodles.
